A simple recipe to create a flavorful cracker that reminds me of the good old days when eating Lunch-ables. This is a vegan-friendly way to elevate your adult Lunch-able snack time.

Ingredients:
- Tofurky- 2 slices
- Cherry Tomatoes (halved)- 4
- Garlic (minced)- ¼ tsp
- Olive oil- 1 tsp
- Italian seasoning- ¼ tsp
- Salt- ⅛ tsp
- Pepper- ⅛ tsp
- Miyoko’s semi-soft cheese spread (chive flavor)- 8 squared cubes
- Crackers; multigrain and garlic and herb- 8 crackers
Instructions:
- Grab a plate and neatly place 8 crackers.
- Slice cherry tomatoes and Miyoko semi-soft cheese.
- Use a small bowl to mix the cherry tomatoes, olive oil, salt, garlic, pepper, and Italian seasoning, set aside.
- Use two pieces of Tofurky stacked on top of each other and cut into 8 pieces.
- Assemble by placing Tofurky pieces first Then add the semi-soft cheese pieces, then place the cherry tomato flat side down.
- Sprinkle the remaining juices of the cherry tomato mix onto each cracker, enjoy!
Notes:
You can also gently spread the semi-soft cheese onto cracker for a more desirable look.
